Ingredients

  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup cream cheese (softened)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • 1/2 cup breadcrumbs (for coating)
  • 2 tablespoons olive oil (for drizzling)

Instructions

  1. In a medium bowl, combine the softened cream cheese, shredded mozzarella, grated Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Mix until well combined and creamy.
  3. Take each piece of chicken and create a pocket by slicing it horizontally without cutting all the way through.
  4. Fill each pocket with about 1 tablespoon of the cheese mixture.
  5. Press the edges to seal.
  6. Preheat your oven to 375°F (190°C).
  7. Place the breadcrumbs in a shallow dish.
  8. Dip each stuffed chicken piece into the breadcrumbs, coating all sides evenly.
  9. Place the coated chicken bites on a greased baking sheet or in a baking dish.
  10. Lightly drizzle the tops with olive oil.
  11. Bake for 25–30 minutes, until the chicken is cooked through and the breadcrumbs are golden brown.
  12. Let the chicken bites cool for a few minutes.
