- 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 cup cream cheese (softened)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
- 1/2 cup breadcrumbs (for coating)
- 2 tablespoons olive oil (for drizzling)
Instructions
- In a medium bowl, combine the softened cream cheese, shredded mozzarella, grated Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Mix until well combined and creamy.
- Take each piece of chicken and create a pocket by slicing it horizontally without cutting all the way through.
- Fill each pocket with about 1 tablespoon of the cheese mixture.
- Press the edges to seal.
- Preheat your oven to 375°F (190°C).
- Place the breadcrumbs in a shallow dish.
- Dip each stuffed chicken piece into the breadcrumbs, coating all sides evenly.
- Place the coated chicken bites on a greased baking sheet or in a baking dish.
- Lightly drizzle the tops with olive oil.
- Bake for 25–30 minutes, until the chicken is cooked through and the breadcrumbs are golden brown.
- Let the chicken bites cool for a few minutes.
- Serve warm with your favorite dipping sauce if desired.
