Description

  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 tablespoon Chili Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Light Soy Sauce
  • 1 teaspoon Sugar
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 cup Mozzarella Cheese, shredded
  • 1 bag Tortilla Chips
  • 1 jar Pickled Jalapeños
  • 1/4 cup Cilantro, chopped
  • Oil for sautéing

Instructions

  1. Shred the sharp cheddar and mozzarella cheeses and set aside.
  2. Heat a splash of oil in a medium pan over medium heat. Sauté the diced onion for about 30 seconds. Add minced garlic and cook for another minute until fragrant.
  3. Add the ground beef to the pan, breaking it up with a spatula. Once halfway cooked, stir in cumin, oregano, paprika, chili powder, onion powder, and garlic powder. Mix well.
  4. Continue cooking until the beef is fully browned, about 5-7 minutes. Stir in light soy sauce and sugar. Drain excess grease if desired.
  5. Lower the heat to medium-low. Sprinkle the shredded cheese over the beef mixture and cover the pan. Let it melt for approximately 3 minutes until bubbly and gooey.
  6. Spread tortilla chips on a serving plate. Top with the cheesy beef mixture. Finish with pickled jalapeños and fresh cilantro. Serve immediately.
