Description

Cheese enchiladas are a comforting Mexican-style dish filled with gooey cheese and topped with rich sauce. This recipe is simple, quick to prepare, and customizable, making it perfect for any occasion. Enjoy a warm, cheesy center wrapped in soft tortillas for an unforgettable comfort food experience.

Ingredients

Scale
  • 12 corn tortillas
  • 2 cups shredded cheese (cheddar or a mix)
  • 1 can (10 oz) red enchilada sauce
  • 1 can (15 oz) black beans, rinsed and drained (optional)
  • 1 cup diced onions (optional)
  • 1 cup sour cream (for serving)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent.
  3. In a bowl, combine sautéed onions, black beans (if using), cumin, garlic powder, and 1 cup of shredded cheese.
  4. To make the tortillas pliable, briefly microwave them or heat them in a dry skillet.
  5. Place a generous amount of the cheese mixture in the center of each tortilla. Roll them up tightly.
  6. Spread a small amount of enchilada sauce on the bottom of a baking dish. Place rolled tortillas seam-side down in the dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well covered.
  8. Sprinkle the remaining shredded cheese evenly over the top.
  9. Place the baking dish in the preheated oven and bake for 25-30 minutes or until the cheese is melted and bubbly.
  10. Remove from the oven and let sit for a few minutes. Garnish with chopped cilantro. Serve with sour cream on the side.
