Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt (to taste)
  • ½ teaspoon black pepper (to taste)
  • 1 cup heavy cream
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken breasts to the pot, cooking until browned on both sides, approximately 5-7 minutes.
  5. Pour in the chicken broth, then add the drained white beans and diced green chilies.
  6. Stir in the Cajun seasoning, cumin, paprika, salt, and black pepper. Mix well.
  7. Bring the mixture to a boil, then reduce the heat and simmer for 20-30 minutes, until the chicken is cooked through.
  8. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  9. Stir in the heavy cream, allowing the chili to heat through for another 5 minutes.
  10. Taste the chili and adjust seasoning if necessary.
