- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 can (4 ounces) diced green chilies
- 1 tablespoon Cajun seasoning
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- ½ teaspoon salt (to taste)
- ½ teaspoon black pepper (to taste)
- 1 cup heavy cream
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chicken breasts to the pot, cooking until browned on both sides, approximately 5-7 minutes.
- Pour in the chicken broth, then add the drained white beans and diced green chilies.
- Stir in the Cajun seasoning, cumin, paprika, salt, and black pepper. Mix well.
- Bring the mixture to a boil, then reduce the heat and simmer for 20-30 minutes, until the chicken is cooked through.
- Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
- Stir in the heavy cream, allowing the chili to heat through for another 5 minutes.
- Taste the chili and adjust seasoning if necessary.
