Butterscotch Budino: An Amazing Ultimate Recipe You Must Try
Ingredients
Scale
- 1 cup packed brown sugar
- ¼ cup granulated sugar
- ¼ cup cornstarch
- ¼ teaspoon salt
- 4 large egg yolks
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon pure vanilla extract
- 4 tablespoons unsalted butter
- Whipped cream, for serving (optional)
- Sea salt, for garnish (optional)
Instructions
- In a medium saucepan, combine the brown sugar, granulated sugar, cornstarch, and salt. Whisk together until well blended.
- In a separate bowl, whisk the egg yolks until smooth.
- Gradually whisk in the milk and heavy cream to the sugar mixture. Place the saucepan over medium heat.
- Stir constantly until the mixture thickens and begins to bubble. This should take about 7-10 minutes.
- Once thickened, remove from heat. Slowly whisk in the egg yolks, making sure to temper them by adding a small amount of the hot mixture first before returning it all to the saucepan.
- Place the saucepan back on medium heat and cook for an additional 2-3 minutes, stirring continuously until the pudding is thick and creamy.
- Remove from heat, and stir in the vanilla extract and butter until fully incorporated.
- Divide the pudding into individual serving cups or ramekins.
- Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
- Before serving, top with whipped cream and a sprinkle of sea salt if desired.
Notes
- Chill the budino for at least 2 hours for the best texture.
- Use high-quality vanilla extract for better flavor.
- Adjust the sweetness by varying the sugar amounts if needed.
