A high-protein buffalo chicken bowl with tender chicken, spicy buffalo sauce, rice, veggies, and creamy ranch or blue cheese. Classic buffalo wings flavor in a healthy bowl!

- 1.5 lb Chicken breast (Cut into bite-size pieces)
- 0.5 cup Buffalo sauce (Adjust to taste)
- 2 tbsp Butter (Melted)
- 1 tbsp Olive oil (For cooking)
- 1 tsp Garlic powder
- 0.5 tsp Onion powder
- Salt and black pepper (To taste)
- 3 cups Cooked rice (White, brown, or cauliflower rice)
- 2 cups Celery (Sliced)
- 1 cup Cucumber (Diced)
- 1 cup Carrots (Shredded)
- 0.5 cup Red onion (Diced)
- 1 Avocado (Sliced)
- 0.5 cup Ranch or blue cheese dressing (Add just before serving)
- 2 Green onions (Sliced)
Instructions
- Heat olive oil in skillet, season chicken, and cook until golden and cooked through.
- Stir in buffalo sauce and melted butter, simmer until coated.
- Prepare rice or cauliflower rice and season lightly.
- Chop celery, cucumber, carrots, onion, and avocado.
- Layer rice, buffalo chicken, vegetables, and avocado.
- Drizzle with dressing and garnish with green onions.
