  • 2 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • ½ cup fresh basil, chopped
  • 3 cloves garlic, minced
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  2. In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Season the chicken breasts with salt and pepper.
  4. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side or until cooked through. Remove the chicken from the skillet and let it rest for a few minutes.
  5. In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant. Then, add the cherry tomatoes and cook for another 3-4 minutes until they soften.
