These Brown Sugar Glazed Carrots are a quick and easy roasted side dish that enhances the natural sweetness of carrots with a rich caramelized glaze.

- 1 kg / 2 lb carrots, peeled
- 1/4 cup (40g) brown sugar, loosely packed
- 2 garlic cloves, minced
- 2 tbsp butter (30g), melted (or use olive oil)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- Parsley, for garnish (optional)
Instructions
- Preheat your oven to 220°C (425°F) for standard ovens or 200°C (400°F) if using a fan-forced oven.
- Cut the carrots diagonally into 4 cm (1.75 inch) lengths.
- In a large bowl, toss the carrot pieces with the brown sugar, melted butter, minced garlic, olive oil, salt, and black pepper until well coated.
- Spread the glazed carrots in a single layer on a roasting tray. Roast them for 15 minutes.
- Remove the tray and gently toss the carrots. Return to the oven and roast for an additional 10 minutes.
- Toss the carrots in the remaining glaze on the tray, sprinkle with fresh parsley if desired, and serve warm.
