- 2 1/4 teaspoons active dry yeast (1 packet)
- 1/4 cup warm milk (about 110°F or 43°C)
- 1/4 cup granulated sugar
- 3 large eggs
- 1/2 teaspoon salt
- 3 1/4 cups all-purpose flour
- 1/2 cup unsalted butter (softened)
- For the Ice Cream Filling:
- 1 quart of your favorite ice cream (such as vanilla, chocolate, or any flavor you prefer)
Instructions
- In a small bowl, combine the warm milk and yeast. Let it sit for about 5–10 minutes until frothy.
- In a large mixing bowl, whisk together the sugar, eggs, and salt. Add the frothy yeast mixture and mix until combined.
- Gradually add the all-purpose flour, mixing until a dough forms.
- Add the softened butter and knead the dough for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1–2 hours, or until doubled in size.
- Preheat your oven to 375°F (190°C).
- Punch down the risen dough and divide it into equal pieces (about 12 pieces for sandwich-sized brioche). Shape each piece into a round ball.
- Place the dough balls on a greased baking sheet, cover, and let them rise for another 30–45 minutes until puffy.
- Bake in the preheated oven for 15–20 minutes, or until golden brown. Remove from the oven and let cool completely.
- Once cooled, slice each brioche in half horizontally.
- Scoop your favorite ice cream onto the bottom half of each brioche and gently press the top half down to create a sandwich.
- Place the assembled sandwiches in the freezer for about 30 minutes to firm up.
- Serve immediately or keep in the freezer until ready to enjoy.
