Description

Brioche Ice Cream Sandwiches are a delightful treat combining soft, buttery brioche bread with your favorite ice cream.


Ingredients

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup warm milk (about 110°F or 43°C)
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1/2 teaspoon salt
  • 3 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter (softened)
  • For the Ice Cream Filling:
  • 1 quart of your favorite ice cream (such as vanilla, chocolate, or any flavor you prefer)

Instructions

  1. In a small bowl, combine the warm milk and yeast. Let it sit for about 5–10 minutes until frothy.
  2. In a large mixing bowl, whisk together the sugar, eggs, and salt. Add the frothy yeast mixture and mix until combined.
  3. Gradually add the all-purpose flour, mixing until a dough forms.
  4. Add the softened butter and knead the dough for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1–2 hours, or until doubled in size.
  6. Preheat your oven to 375°F (190°C).
  7. Punch down the risen dough and divide it into equal pieces (about 12 pieces for sandwich-sized brioche). Shape each piece into a round ball.
  8. Place the dough balls on a greased baking sheet, cover, and let them rise for another 30–45 minutes until puffy.
  9. Bake in the preheated oven for 15–20 minutes, or until golden brown. Remove from the oven and let cool completely.
  10. Once cooled, slice each brioche in half horizontally.
  11. Scoop your favorite ice cream onto the bottom half of each brioche and gently press the top half down to create a sandwich.
  12. Place the assembled sandwiches in the freezer for about 30 minutes to firm up.
  13. Serve immediately or keep in the freezer until ready to enjoy.
