Description

This Easy Baked Shrimp Scampi recipe combines succulent shrimp with a zesty lemon and garlic sauce topped with a buttery panko crust.


Ingredients

  • 1 lb shrimp (peeled, deveined)
  • 3 cloves garlic (minced)
  • 1 lemon (juiced)
  • 1/4 cup white wine
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil spray
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons light butter (softened at room temperature, not melted)

Instructions

  1. Set your oven to 425°F (220°C).
  2. Lay the peeled and deveined shrimp flat in a small baking dish and spray lightly with olive oil. Season with kosher salt and black pepper.
  3. Pour lemon juice and white wine over the shrimp. Sprinkle minced garlic on top.
  4. In a separate bowl, mix softened light butter with panko breadcrumbs until it resembles wet sand.
  5. Evenly sprinkle the panko and butter mixture over the shrimp.
  6. Bake for 15 minutes until shrimp are opaque and topping is golden brown.
