These No Bake Superfood Brownies are a healthy and delicious treat packed with natural sweetness from dates, nutritious nuts, and rich dark chocolate. They are gluten-free, vegan, and incredibly easy to prepare without any baking.

- ⅔ cup soft pitted dates
- ⅓ cup mixed nuts
- 2 tablespoons coconut flour
- 1 tablespoon cacao powder
- 1 tablespoon raisins (or currants, cranberries)
- 4 dried mango slices (or apricots)
- ¼ teaspoon salt
- 1 tablespoon water
- ¼ cup dark chocolate chips
- ½ teaspoon coconut oil
- a sprinkle fleur de sel
- a few chopped dried mango slices
- a few chopped nuts
Instructions
- Pulse the dates and mixed nuts in a food processor until coarsely chopped.
- Add the coconut flour, cacao powder, raisins, dried mango slices, salt, and water to the processor. Blend until the mixture is sticky and well combined.
- Line an 8-inch (20 cm) loaf pan with parchment paper. Firmly press the mixture into the pan.
- Melt the dark chocolate chips and coconut oil together until smooth. Pour over the brownie mixture and spread evenly.
- Sprinkle fleur de sel, chopped dried mango slices, and chopped nuts over the chocolate layer. Freeze for 20 minutes or refrigerate for 3 hours.
- Once set, remove the brownies from the pan and cut into 1-inch (2.5 cm) squares.
Notes
- This recipe yields about 24 small brownie bites.
- Store in an airtight container in the refrigerator for up to a week.
