  • Salt and pepper to taste
  • 1 cup beef or vegetable broth
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish (optional)
  • Sour cream and shredded cheese, for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon.
  3. Stir in the chopped onion and minced garlic, cooking until the onion is translucent.
  4. Add chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper to the meat mixture. Stir well and cook for about 2 minutes to toast the spices.
  5. Pour in the crushed tomatoes and stir to combine.
  6. Mix in the kidney beans, black beans, and broth, ensuring everything is well combined.
  7. Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally.
  8. After simmering, taste the chili and adjust seasoning as needed.
