- 2 pounds ground beef or turkey
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cans (15 ounces each) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- ½ teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 cup beef or vegetable broth
- 1 tablespoon olive oil
- Fresh cilantro, for garnish (optional)
- Sour cream and shredded cheese, for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the ground beef or turkey and cook until browned, breaking it apart with a spoon.
- Stir in the chopped onion and minced garlic, cooking until the onion is translucent.
- Add chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper to the meat mixture. Stir well and cook for about 2 minutes to toast the spices.
- Pour in the crushed tomatoes and stir to combine.
- Mix in the kidney beans, black beans, and broth, ensuring everything is well combined.
- Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally.
- After simmering, taste the chili and adjust seasoning as needed.
- If desired, garnish with fresh cilantro before serving.
