Autumn Sausage Pasta Squash is a delicious and hearty dish that combines roasted butternut squash, savory sausage, and pasta in a creamy sauce.

- 1 medium butternut squash, peeled and cubed
- 1 lb Italian sausage (pork or turkey)
- 8 oz pasta (penne or rigatoni)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). Toss the cubed squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes or until tender.
- While the squash is roasting, cook the pasta according to package instructions. Drain and set aside.
- In a large skillet over medium heat, add the sausage. Cook until browned, breaking it apart with a spatula.
- Once the sausage is nearly cooked, add the diced onion and minced garlic. Sauté until the onion is translucent.
- Add the vegetable broth, dried oregano, and thyme to the skillet. Stir to combine and let simmer for 5 minutes.
- Add the cooked pasta and roasted squash to the skillet. Toss to combine all ingredients evenly.
- Sprinkle the grated Parmesan cheese over the mixture and stir until melted and creamy.
- Season with additional salt and pepper if needed.
- Remove from heat and garnish with fresh parsley before serving.
