Description

Autumn Sausage Pasta Squash is a delicious and hearty dish that combines roasted butternut squash, savory sausage, and pasta in a creamy sauce.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 lb Italian sausage (pork or turkey)
  • 8 oz pasta (penne or rigatoni)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes or until tender.
  2. While the squash is roasting, cook the pasta according to package instructions. Drain and set aside.
  3. In a large skillet over medium heat, add the sausage. Cook until browned, breaking it apart with a spatula.
  4. Once the sausage is nearly cooked, add the diced onion and minced garlic. Sauté until the onion is translucent.
  5. Add the vegetable broth, dried oregano, and thyme to the skillet. Stir to combine and let simmer for 5 minutes.
  6. Add the cooked pasta and roasted squash to the skillet. Toss to combine all ingredients evenly.
  7. Sprinkle the grated Parmesan cheese over the mixture and stir until melted and creamy.
  8. Season with additional salt and pepper if needed.
  9. Remove from heat and garnish with fresh parsley before serving.
